Chocolate Covered "Chewy" Peanut Butter Cookies


I've always loved chewy peanut butter cookies, it's one of my favorite guilty sweet pleasures. I guess there's just something about peanut butter because just eating it out of the jar is good by itself. However, for some reason when you mix it with chocolate, it becomes a sweet lovers dream come true. Take for instance, the chocolate covered peanut butter popcorn I made awhile back. It was perfection in a bowl! Seriously, words can't tell you delicious that was but I digress. I wish I could tell you how good these chocolate covered chewy peanut butter cookies are but you're just going to have to try them for yourself.


Ingredients to make chewy peanut cookies (makes about 18 cookies):
  • 1/2 cup peanut butter
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 1/2 cup butter (make sure it's soft before you mix it)
  • 2 eggs
  • 2 tablespoons light corn syrup
  • 2 tablespoons water
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda 
Steps for making chewy peanut butter cookies:



 In a large bowl or mixer combine all the ingredients.

Finally after the mixing is done, look at the tempting peanut butter dough just sticking to the mixing spoon. Wait just a second, before I continue making these I better eat a piece...there that's better


After you've done your dough taste test which I know you will, you grease up a cookie sheet with non-stick cooking spray. Make sure to preheat your oven to 375 degrees. Then roll that dough into little 1 inch balls of goodness and place on the cookie sheet with enough space between them.


Cookies should be taken out of the oven in approximately 14 minutes or when they are brown on the edges. Once they are out, let the cookies cool a couple minutes before taking them off the cookie sheet. Also for ultimate cookie bliss let the cookies cool even more beyond that, trust me it's worth waiting because now we are heading into unexplored territory. Plus, you need to let cool before you making them chocolate covered.

Ingredients for making you're now chewy peanut butter cookies chocolate covered:

  • 6 ounces of Ghirardelli Semi-Sweet Chocolate Chips (for making the melted chocolate and this makes about 5 of your medium sized peanut butter cookies chocolate covered). 
Steps for chocolate covered peanut butter cookie bliss:

Add 6 ounces of chocolate chips to a Double Boiler and melt the chips.


When the chocolate chips are completely melted, take one cookie at a time and dunk it into chocolate bliss (as above). Using a spoon or some sort, completely cover the cookie in chocolate.

Line a cookie tray with wax paper and lay out the chocolate covered cookies and then place the tray in the fridge and allow to dry for at least 2 to 3 hours. You might have a little excess chocolate pooling on the wax paper but that's ok, after they are dry, you can break this off and enjoy it.
